  • 1 pound ground beef (preferably lean) Choose lean beef for more protein and less fat.
  • 1 tablespoon taco seasoning Or homemade if preferred.
  • 2 medium sweet potatoes, diced These will be roasted until tender.
  • 1 cup cottage cheese Adds creaminess and protein.
  • 1 ripe avocado, sliced Adds healthy fats.
  • to taste hot honey For a sweet and spicy kick.
  • for roasting olive oil For roasting sweet potatoes.
  • to taste salt and pepper To season the sweet potatoes.

Preparation

  • In a skillet over medium heat, add the ground beef and break it apart with a spatula. Season with taco seasoning and cook until browned, about 5 to 7 minutes.
  • Preheat the oven to 400°F (200°C). In a bowl, toss diced sweet potatoes with olive oil, salt, and pepper. Spread on a baking sheet and roast for 25 to 30 minutes, stirring halfway through.

Assembly

  • In each serving bowl, layer the cooked ground beef, followed by a scoop of cottage cheese, roasted sweet potatoes, and sliced avocado.
  • Drizzle with hot honey before serving.

Notes

Feel free to tweak spices, substitute sweet potatoes with quinoa for a different base, and consider meal prepping by cooking in bulk. Add greens for extra nutrition.
