Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line a loaf pan with parchment paper.
  • In a large mixing bowl, combine the mashed bananas, Greek yogurt, honey or maple syrup, eggs, and vanilla extract. Mix until smooth and creamy.
  • In another bowl, whisk together the oat flour, protein powder, baking powder, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing gently until just combined. Fold in the mini chocolate chips.

Baking

  • Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  • Bake for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Notes

Use overripe bananas for the best sweetness and moisture. Consider adding nuts or spices for variation. Store wrapped in plastic or foil at room temperature or in the fridge for longer freshness.
