  • 1 cup honey BBQ sauce Sweet and tangy flavor that marinates the chicken
  • 1 pound baby potatoes, diced Hearty side dish, creamy and starchy

Instructions

Preparation

  • Begin by preheating your grill or oven to medium-high heat. If using a grill, ensure the grates are clean and lightly oiled.
  • Season the chicken breasts liberally with salt and pepper on both sides, then brush honey BBQ sauce all over the chicken.
  • Allow the chicken to marinate for a few minutes while you prepare the garlic parmesan potatoes.
  • Boil a pot of water with a pinch of salt, add diced baby potatoes, and cook until tender (about 15 minutes).

Cooking

  • Grill the chicken for 6-7 minutes on each side, or until fully cooked (internal temperature should reach 165°F).
  • During the last minute of grilling, brush an additional layer of honey BBQ sauce on the chicken.
  • Drain the cooked potatoes, return them to the pot, add olive oil, minced garlic, and Parmesan cheese, and stir until well combined. Season with salt and pepper.
  • Serve grilled chicken alongside cheesy garlic parmesan potatoes, garnished with fresh parsley if desired.

Notes

For deeper flavor, marinate chicken in honey BBQ sauce for a few hours or overnight. Use a meat thermometer for perfect cooking. Explore alternative sauces or cheese for variations. Store leftovers in the refrigerator for up to three days or freeze them for longer storage.
