Ingredients
  

For the Chicken Marinade

  • 4 pieces Chicken breasts Main protein, absorbs marinade flavors.
  • 1/4 cup Honey Adds sweetness and tenderizes chicken.
  • 1/4 cup Fresh lime juice Provides acidity to balance the sweetness.
  • 2 tablespoons Olive oil Prevents sticking, enhances richness.
  • 1 teaspoon Salt Seasoning to enhance overall flavors.
  • 1 teaspoon Black pepper Seasoning to enhance overall flavors.

For Assembly

  • 2 cups Rice (your choice) Base layer, filling, and carbohydrate source.
  • 1 medium Avocado Creaminess and healthy fats.
  • 1/4 cup Fresh cilantro, chopped Garnish, adds herbaceous freshness.

Instructions
 

Marinate the Chicken

  • In a bowl, whisk together honey and fresh lime juice. Season the chicken breasts with salt and black pepper.
  • Coat each chicken breast in the honey-lime mixture and allow to marinate for at least 30 minutes, preferably overnight.

Cook Your Rice

  • Cook your choice of rice according to package instructions. Fluff it gently with a fork and set aside.

Sauté the Chicken

  • Heat olive oil in a large skillet over medium heat.
  • Place the marinated chicken breasts in the skillet and cook for about 5 to 7 minutes on each side or until they reach an internal temperature of 165°F.
  • Remove the chicken from skillet and let it rest for a few minutes before slicing into bite-sized pieces.

Assemble Your Stack

  • Start with a layer of cooked rice at the bottom of the serving dish.
  • Arrange the diced avocado on top of the rice.
  • Layer the sliced honey-lime chicken over the avocado.
  • Sprinkle chopped cilantro over the top and serve with lime wedges on the side.

Notes

For best results, let the chicken marinate overnight. You can switch up the rice type or add vegetables like tomatoes or roasted corn for variation. Store leftovers separately as avocado does not keep well once cut.
