Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, cream together the unsalted butter and granulated sugar until light and fluffy.
  • Incorporate the brown sugar into the mixture, then add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  • In another bowl, sift together the all-purpose flour, cocoa powder, baking powder, and salt.
  • Gradually mix the dry ingredients into the wet mixture until just combined. Fold in the chocolate chips and marshmallow bits.

Baking

  • Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them two inches apart.
  • Bake for 10-12 minutes or until set and edges look firm. Allow to cool slightly on the sheets before transferring to a wire rack.

Notes

To store cookies, place them in an airtight container at room temperature for up to a week. For freezing, layer with parchment paper to prevent sticking.
