Ingredients
  

Chicken and Seasoning

Sauce

  • 1 cup BBQ sauce Moisture and sweetness
  • 3 tablespoons hot honey For a spicy kick

Tortillas and Cheese

  • 4 large flour tortillas Wrap for the quesadillas
  • 2 cups shredded cheese (cheddar, Monterey Jack, or your favorite blend) For gooey filling

Preparation

  • Pat the chicken breasts dry with paper towels. Cut the chicken into bite-sized pieces.
  • Season the chicken with salt, pepper, and BBQ seasoning.

Cooking Chicken

  • Preheat your Blackstone griddle to medium heat with a drizzle of oil.
  • Cook the seasoned chicken for about six minutes until it sears slightly.
  • Add the BBQ sauce and hot honey, stir together, and cook for an additional two minutes.

Assembling Quesadillas

  • Reduce the griddle to medium-low and lay the tortillas on the surface.
  • Sprinkle cheese over one side of each tortilla, add the BBQ chicken mixture, drizzle with more BBQ sauce, and garnish with cilantro if desired.
  • Fold the tortillas over to create a half-moon shape and cook for 1-2 minutes on each side until crispy.

Serving

  • Slice the quesadillas into wedges and serve hot.

Notes

Feel free to customize with different cheeses, veggies, or dipping sauces. Great with ranch, sour cream, or guacamole.
