Instructions
 

Preparation

  • Season the chicken thighs generously with salt and pepper on both sides.
  • In a large skillet, heat olive oil over medium heat.
  • Once the oil is hot, add the seasoned chicken thighs and sear them for 6 to 7 minutes on each side until golden brown.
  • Remove the chicken thighs and set them aside.

Making the Sauce

  • In the same skillet, add the diced onion and minced garlic, sautéing for about 3 to 4 minutes until translucent.
  • Pour in the Irish whiskey, scraping up any browned bits, and let it simmer for about 5 minutes.
  • Stir in the heavy cream and Dijon mustard, bringing it to a light simmer.

Finishing the Dish

  • Return the seared chicken thighs to the skillet, coating them in the sauce.
  • Cover the skillet and cook on low heat for another 10 to 15 minutes until the chicken is fully cooked.
  • Garnish with chopped parsley and serve hot.

Notes

Use a whiskey you enjoy drinking for the best flavor. If you don't have whiskey, chicken broth can be substituted, although it won't have the same depth. To thicken the sauce, consider adding a bit of flour or cornstarch mixed with water.
