Vegetables

  • 2 stalks celery, chopped Adds crunch and flavor.
  • 3 cloves garlic, minced
  • 14.5 ounces diced tomatoes (canned) Adds acidity and freshness.

Liquids and Seasonings

  • 4 cups chicken broth
  • 1 tablespoon Cajun seasoning Brings heat and robust flavor.
  • 1 teaspoon dried thyme
  • 2 tablespoons vegetable oil For cooking.
  • Salt and pepper to taste

Grains

  • 1 ½ cups long-grain rice Absorbs flavor while providing a hearty texture.

Instructions
 

Preparation

  • Heat vegetable oil in a large pot over medium heat. Add the diced chicken and slices of andouille sausage, cooking until browned.

Add Vegetables

  • Stir in the chopped onion, bell pepper, celery, and minced garlic. Cook until softened.

Combine Liquids

  • Add canned diced tomatoes, chicken broth, Cajun seasoning, and thyme. Stir well, then bring to a boil.

Cook Rice

  • Add the long-grain rice, reduce heat to low, cover, and let simmer for 20-25 minutes.

Finish

  • Add the shrimp and cook for an additional 5 minutes until pink. Season to taste and garnish with sliced green onions.

Notes

Taste as you go and adjust seasoning. Jambalaya can be customized with different proteins or omitted ingredients.
