  • 1/4 teaspoon Salt
  • 1/2 cup Key lime juice Freshly squeezed

Preparation

  • Preheat your oven to 350°F (175°C). Gather all ingredients at room temperature.
  • Sift together the cake flour, ¾ cup of granulated sugar, and salt in a medium bowl.

Whipping Egg Whites

  • Beat the egg whites until frothy, then add cream of tartar and vanilla extract.
  • Continue beating until soft peaks form. Gradually add the remaining granulated sugar until stiff peaks form.

Folding and Baking

  • Gently fold the flour mixture into the whipped egg whites, being careful not to deflate the mixture.
  • Fold in the key lime juice and zest, then pour the batter into an ungreased angel food cake pan.
  • Bake for 30-35 minutes or until the cake is golden brown and springs back when lightly touched.

Cooling and Serving

  • Once baked, invert the pan to cool completely before removing the cake.
  • Dust with powdered sugar before serving.

Notes

For best results, start with room-temperature egg whites and ensure your mixing bowl is free of grease. Variations can include adding other citrus zests and serving with whipped cream or fruit compote.
