Beef and Marinade

  • 2 pounds Beef (such as flank steak or sirloin) Main protein source.

  • 1/4 cup Soy sauce Low-sodium option is healthier.
  • 2 tablespoons Sesame oil Adds nuttiness.
  • 1/2 teaspoon Black pepper Provides a spicy kick.
  • 1 tablespoon Sugar Balances saltiness.
  • 4 cups Beef broth Keeps dish moist.

Noodles and Vegetables

  • 12 ounces Noodles (egg noodles or rice noodles) Base of the dish.
  • 2 cups Mixed vegetables (bell peppers, carrots, bok choy) Adds color and nutrients.
  • 1/4 cup Green onions, chopped For garnish.

Preparation

  • Prepare the slow cooker with all ingredients, adding beef, minced garlic, grated ginger, soy sauce, sesame oil, black pepper, and sugar.
  • Add enough beef broth to fully submerge the meat, cover the slow cooker, and set it to cook on low for 6 to 8 hours.

Noodles and Vegetables

  • After cooking, remove the beef and slice it thinly against the grain. Add mixed vegetables and noodles to the slow cooker.
  • Cover and switch the cooker to high for 30 minutes until the noodles are soft.

Serving

  • Ladle the noodles and vegetables into bowls, topping with sliced beef and garnishing with chopped green onions.

Notes

Use homemade broth for richer flavor. Avoid overcooking noodles and feel free to customize vegetables. Add red pepper flakes for spice.
