  • 8 ounces Bowtie pasta (or your pasta of choice) Choose a fun shape that traps the dressing.
  • 2 cups Assorted fresh vegetables (bell peppers, cherry tomatoes, cucumbers, red onions) Chop into bite-sized pieces.
  • 1/4 cup Fresh herbs (parsley and basil) Chopped for added flavor.

Dressing and Seasoning

  • 1/3 cup Extra virgin olive oil High-quality for the best flavor.
  • 2 tablespoons Red wine vinegar (or preferred vinegar) Adjust to taste.
  • to taste Salt and freshly ground black pepper Essential for seasoning.
  • optional Feta cheese or mozzarella balls Add for creaminess and richness.

Instructions
 

Preparation

  • Cook the pasta according to package instructions until al dente, then strain and rinse under cold water to cool.
  • Chop assorted vegetables into bite-sized pieces: dice bell peppers, halve cherry tomatoes, quarter cucumbers, and thinly slice red onions.

Mixing

  • In a large mixing bowl, combine the cooled pasta and chopped vegetables.
  • Drizzle with olive oil and red wine vinegar, then season with salt and pepper. Toss gently to mix.

Chill and Serve

  • Cover the bowl and let the salad chill in the fridge for at least 1 hour before serving.

Notes
