Preparation

  • Preheat the oven to 350°F (175°C). Prepare two 8-inch round cake pans by greasing or lining them with parchment paper.
  • Cream together softened butter and granulated sugar until light and fluffy. Beat in eggs one at a time, then stir in the lemon zest and vanilla extract.
  • In a separate bowl, whisk together flour, baking powder, and salt. Gradually add this dry mixture, alternating with the milk and lemon juice into the butter-sugar-egg blend until just combined.
  • Divide the batter evenly between the prepared pans. Bake for 25–30 minutes until a toothpick inserted in the center comes out clean.
  • Let the cakes cool in the pans for 10-15 minutes before transferring to a wire rack to cool completely.

Filling & Assembly

  • Beat cream cheese and powdered sugar in a mixing bowl until smooth. Add lemon juice and zest.
  • Whip heavy cream until stiff peaks form and gently fold into the cream cheese mixture.
  • Once the cake layers are cooled, spread the filling over the first layer, then place the second layer on top. Optionally, add more whipped cream on the top layer.
  • Chill the assembled cake in the refrigerator for at least one hour before serving.

Notes

For the best results, use room temperature ingredients. Avoid overmixing to keep the cake airy. Fresh lemon juice gives the best flavor.
