Dressing

  • 3 tablespoons olive oil Use extra virgin for best flavor.
  • 1 Juice of 1 lemon Freshly squeezed for zest.

Preparation

  • Combine the chickpeas, diced cucumbers, halved cherry tomatoes, and crumbled feta cheese in a large mixing bowl.
  • Gently fold in the thinly sliced red onions and chopped parsley, being careful not to over-mix.
  • Drizzle olive oil and lemon juice over the salad, and season with salt and pepper.
  • Toss everything together until well combined and let it sit for a few minutes before serving.
