Preparation

  • Wash the kale thoroughly under cold water to remove grit. Dry using a salad spinner.
  • Chop the kale into bite-sized pieces, removing tougher stems if desired.
  • In a small bowl, whisk together the lemon juice, olive oil, sea salt, and black pepper.
  • In a large mixing bowl, combine the chopped kale and grated Parmesan cheese, tossing lightly.
  • Pour the dressing over the kale and massage it into the leaves for 3 to 5 minutes until well-coated and softened.
  • Top with croutons and serve immediately.

Notes

Store leftovers in an airtight container in the refrigerator for 2-3 days. Keep dressing and croutons separate to maintain freshness.
