Instructions
 

Preparation

  • Heat a tablespoon of olive oil in a large pot over medium heat until shimmering.
  • Add the diced onion and sauté for about 3 to 5 minutes until translucent.
  • Stir in sliced carrots, diced celery, and chopped bell pepper; sauté for another 5 minutes.
  • Add minced garlic and cook for 1 more minute until fragrant.
  • Incorporate chopped cabbage and stir until it wilts slightly.

Cooking

  • Pour in the cans of diced tomatoes and vegetable broth.
  • Sprinkle in dried thyme, and season with salt and pepper to taste.
  • Bring the mixture to a boil, then reduce heat and allow to simmer for about 30 minutes.
  • Check for tenderness of the vegetables and adjust seasoning if needed.
  • Serve hot, garnished with fresh herbs if desired.

Notes

For a smoother texture, blend a portion of the soup before serving. You can also add spices like cumin or paprika to enhance flavor.
