Instructions
 

Preparation

  • Preheat your oven to 325°F (163°C) and grease the bottom and sides of an 8-inch square baking dish.
  • In a small bowl, mix together the gluten-free flour, cornstarch, and xanthan gum until well combined. Set aside.

Mixing Egg Whites

  • In a large mixing bowl, combine the egg whites and lemon juice. Beat at medium-high speed until frothy.
  • Gradually add in half of the granulated sugar and continue beating until stiff, glossy peaks form.

Mixing Egg Yolks

  • In a separate bowl, whisk together the egg yolks, remaining granulated sugar, milk, and vanilla extract until smooth.
  • Fold in the prepared flour mixture gently to combine.

Combining Mixtures and Baking

  • Carefully fold the egg yolk mixture into the egg whites, maintaining the aeration.
  • Pour the batter into the greased baking dish and spread evenly.
  • Bake for approximately 40-45 minutes or until the top is golden brown and a toothpick inserted comes out clean.
  • Allow the cake to cool in the pan before transferring to a serving platter.

Notes

For best results, measure flour accurately and consider adding a twist with vanilla and almond extract. Dust with powdered sugar or serve with fresh berries for enhanced presentation. Store leftovers in an airtight container for up to three days.
