  • as needed oil for frying For achieving crispiness

Instructions

Preparation

  • Gather all your ingredients and measure them out before starting to cook.
  • Preheat oil in a deep-fryer or heavy skillet over medium heat.

Mixing Ingredients

  • In a large bowl, combine the dry ingredients: cornmeal, flour, sugar, baking powder, baking soda, and salt.
  • In a separate bowl, whisk together the wet ingredients: buttermilk, eggs, and melted butter.
  • Make a well in the center of the dry mixture and pour in the wet mixture. Stir gently until just combined.
  • Fold in the corn, bell peppers, green onions, and cayenne pepper.

Cooking

  • Carefully drop spoonfuls of batter into the hot oil, making sure not to overcrowd the pan.
  • Fry for 3 to 4 minutes on each side until golden-brown.
  • Transfer the fritters to a plate lined with paper towels to absorb excess oil.

Notes

Adjust the spice level to suit your taste. For a milder fritter, reduce or omit the cayenne pepper. Experiment with different vegetables or cheeses for variation. Ensure oil temperature is steady for best frying results. Store leftovers in an airtight container in the refrigerator for up to 3 days, or freeze for longer storage.
