Preparation

  • Gather all your ingredients in a bowl.
  • Whisk together olive oil and lemon juice in a medium-sized bowl.
  • Mince the garlic and add it along with oregano, thyme, salt, black pepper, and red pepper flakes.
  • Ensure the mixture is well combined.

Marinating the Chicken

  • Place boneless, skinless chicken breasts in a resealable bag.
  • Pour the marinade over the chicken, seal the bag, and massage the contents to coat evenly.
  • Refrigerate for at least one hour, or overnight for best results.

Cooking

  • Preheat your grill to medium-high heat.
  • Grill the marinated chicken breasts for 6 to 7 minutes on each side until the internal temperature reaches 165°F.
  • Let the chicken rest for a few minutes before slicing.

Notes

For best flavor, use fresh ingredients. The marinade can also be used for seafood or vegetables. Leftover marinade should not be reused on raw proteins but can be cooked down to make a sauce.
