  • 1 medium zucchini Sliced into half-moon shapes.
  • 1 cup cherry tomatoes Halved.
  • 1/4 cup Kalamata olives Sliced.

Seasoning and oils

  • 3 tablespoons olive oil For sautéing.

  • 1 teaspoon black pepper To season chicken.
  • 1 teaspoon dried oregano For Mediterranean flavor.

Preparation

  • Slice the chicken breasts into bite-sized pieces, chop the onion and mince the garlic.
  • Slice the red and yellow bell peppers into thin strips and cut the zucchini into half-moon shapes.
  • Halve the cherry tomatoes and slice the Kalamata olives.

Cooking

  • Heat three tablespoons of olive oil in a large skillet over medium-high heat.
  • Add the sliced chicken pieces, seasoning with salt and pepper. Sear for 5-7 minutes until golden brown.
  • Remove the cooked chicken from the skillet and set aside to rest.
  • In the same skillet, add the chopped onions and minced garlic. Sauté for 1-2 minutes until translucent.
  • Add the sliced bell peppers and zucchini to the skillet. Stir-fry for 4-5 minutes until tender yet crisp.
  • Return the chicken to the skillet with the halved cherry tomatoes and sliced Kalamata olives.
  • Sprinkle with oregano and paprika, then toss to combine.
  • Drizzle lemon juice over everything and, optionally, add crumbled feta cheese.
  • Cook for an additional minute before removing from heat.
