  • 6 large large eggs
  • 4 strips cooked bacon Crispy for best texture
  • 1/4 cup mayonnaise Your favorite type
  • 1 tablespoon Dijon mustard For tanginess
  • 1 teaspoon white vinegar Adds brightness

Preparation

  • Place the six large eggs in a saucepan and cover with cold water. Bring to a rapid boil, then reduce heat and simmer for 10-12 minutes.
  • Transfer eggs into an ice water bath to cool for 5-10 minutes.
  • Once cool, peel the eggs under running water.

Filling Preparation

  • Slice each egg in half lengthwise and scoop out the yolks into a mixing bowl.
  • Mash yolks with mayonnaise, Dijon mustard, white vinegar, salt, and pepper until smooth.

Assembly

  • Crumble the crispy bacon into the yolk mixture, reserving some for garnish.
  • Fill each egg white half with the bacon-yolk mixture, and sprinkle reserved bacon bits on top.
  • Garnish with finely chopped fresh chives before serving.

Notes

Use slightly older eggs for easier peeling. You can prepare the filling in advance and store it in the refrigeration separately from the egg whites until ready to assemble.
