Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a bowl, mix graham cracker crumbs and melted butter. Press the mixture into the bottom of mini cupcake liners.
  • In another bowl, beat the cream cheese until smooth. Add sugar and sour cream, mixing well.
  • Fold in the eggs one at a time, followed by vanilla extract until fully combined.
  • Spoon the cream cheese mixture into the prepared crusts.

Baking

  • Bake for 15-20 minutes until set.
  • Let cool and refrigerate for at least 2 hours before serving.
