Preparation

  • Rinse the fresh cucumbers under cold water to remove any dirt. Slice the cucumbers into thin half-moon shapes.
  • Peel the Vidalia onion and slice it into thin rings.

Make the Dressing

  • In a large mixing bowl, combine the apple cider vinegar, white vinegar, and water.
  • Add the granulated sugar and salt; whisk until fully dissolved.

Marination

  • Add the sliced cucumbers and onions to the bowl with the dressing. Ensure all vegetables are well-coated.
  • Cover with plastic wrap or a lid and refrigerate for at least 2 hours, or overnight for best results.

Notes

For best flavor, use organic cucumbers and high-quality vinegars. For a spicier kick, add red pepper flakes or jalapeƱos. You can also include other vegetables like bell peppers or radishes for added color and texture.
