Preparation

  • Gather all fresh ingredients and measure them out.
  • In a large skillet, heat olive oil over medium heat.
  • Add diced onion and minced garlic, sautéing until translucent and fragrant.

Cooking

  • Season the chicken thighs with salt and pepper on both sides, then add to the skillet.
  • Brown the chicken on both sides for about 5 minutes each.
  • Once browned, add the rice, chicken broth, BBQ sauce, and honey to the skillet.
  • Stir all ingredients together until well combined.
  • Bring to a gentle boil, then reduce heat to low, cover the skillet and simmer for about 20 minutes.
  • Check that the rice is fluffy, fluff with a fork, garnish with green onions, and serve hot.
