  • 4 pieces boneless, skinless chicken thighs
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1 cup honey BBQ sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1 cup frozen mixed vegetables (peas, carrots, and corn)
  • 2 tablespoons olive oil
  • to taste salt and pepper
  • for garnish chopped green onions optional

Preparation & Cooking

  • Gather and prepare all ingredients before cooking.
  • Heat olive oil in a large skillet over medium-high heat.
  • Season chicken thighs with salt and pepper, and add to the skillet. Cook for 5-7 minutes on each side until golden brown and cooked through. Remove and set aside.
  • In the same skillet, toast the rice for 1-2 minutes, stirring frequently.
  • Combine chicken broth, honey BBQ sauce, garlic powder, onion powder, and smoked paprika into the skillet with the rice. Stir to combine.
  • Bring the mixture to a boil, then reduce the heat to low and nestle the chicken on top of the rice mixture. Add frozen vegetables.
  • Cover the skillet and simmer for 20-25 minutes until the rice is cooked and has absorbed the liquid.
  • Let the skillet sit covered for an additional 5 minutes off the heat. Fluff rice with a fork and garnish with green onions before serving.

Notes

Use a large enough skillet, preferably cast-iron or stainless steel. Consider substituting chicken thighs with chicken breasts, adjusting cooking times accordingly. Homemade honey BBQ sauce can be an alternative.
