Ingredients
  

For the Chicken Marinade

  • 4 pieces Bone-in, skin-on chicken thighs
  • 4 pieces Bone-in, skin-on chicken drumsticks
  • 1/4 cup Olive oil
  • 1/2 cup Fresh lime juice
  • 6 cloves Garlic, minced
  • 2 teaspoons Ground cumin
  • 2 teaspoons Smoked paprika
  • 1 teaspoon Dried oregano
  • Salt and pepper to taste Salt and pepper, to taste

For the Creamy Green Sauce

  • 1 cup Mayonnaise
  • 1/2 cup Sour cream
  • 1 cup Fresh cilantro, chopped
  • 1/2 cup Fresh parsley, chopped
  • 1-2 pieces Jalapeños, chopped (adjust to taste)

Instructions
 

Preparation

  • In a spacious mixing bowl, combine olive oil, fresh lime juice, minced garlic, ground cumin, smoked paprika, dried oregano, salt, and pepper. Whisk together until blended.
  • Add the chicken pieces into the bowl, ensuring they are thoroughly coated in the marinade.
  • Cover the bowl with plastic wrap and let the chicken marinate in the refrigerator for at least four hours, preferably overnight.

Roasting the Chicken

  • Preheat the oven to 425°F (220°C). Line a baking sheet with foil or parchment paper and place a wire rack on top.
  • Arrange marinated chicken pieces skin-side up on the rack.
  • Roast chicken in the preheated oven for about 40-45 minutes, or until internal temperature reaches 165°F (74°C).
  • For added char, broil chicken for the last three minutes.
  • Let the chicken rest for a few minutes before serving.

Making the Sauce

  • In a blender or food processor, combine mayonnaise, sour cream, chopped cilantro, parsley, chopped jalapeños, remaining minced garlic, lime juice, olive oil, and a pinch of salt.
  • Blend until you achieve a smooth consistency and adjust seasoning to taste.

Serving

  • Serve the chicken hot, drizzled with or alongside the creamy green sauce.
  • Pair with roasted potatoes, fluffy rice, or a fresh salad.

Notes

Use fresh ingredients for better flavor. Marinate for longer for enhanced taste. The creamy green sauce can also be enjoyed as a dip or spread.
