Preparation

  • Prepare all your ingredients. Thaw chicken breasts and pat dry with paper towels.
  • Chop the onion, bell pepper, and garlic finely.

Cooking

  • Heat a large skillet over medium-high heat, then add olive oil.
  • Sear the chicken breasts for 5 to 7 minutes on each side until golden brown, then remove from the skillet.
  • In the same skillet, add onion, garlic, and bell pepper and sauté for 3 to 5 minutes until softened.
  • Return the chicken to the skillet, add diced tomatoes, oregano, smoked paprika, salt, and black pepper.
  • Stir well, cover the skillet with a lid, and cook on low heat for another 10 to 12 minutes.

Notes

For added heat, consider using red pepper flakes. Herbs like fresh basil or thyme can enhance the flavor. Serve with rice or quinoa for a hearty meal. Marinating chicken in advance can expedite cooking and intensify flavor.
