Ingredients

Main Ingredients

  • 1.5 pounds Pork Tenderloin Choose a lean cut for tenderness.
  • 1 medium Fresh Pineapple Adds sweetness and acidity.
  • 1 medium Red Onion Brings sweetness and color.
  • 1 large Green Bell Pepper Provides crunch and a fresh flavor.

Marinade

  • 1 cup Barbecue Sauce Use your favorite sauce for a rich flavor.
  • 2 tablespoons Olive Oil Helps in marinating and adds depth.
  • 2 tablespoons Soy Sauce Enhances umami flavors.
  • 1 teaspoon Garlic Powder Adds aromatic depth.
  • 1 teaspoon Black Pepper For seasoning.

Instructions

Preparation

  • Preheat the grill to medium heat. Gather all your ingredients and tools for a smooth cooking experience.
  • Trim any excess fat from the pork tenderloin and cut it into 1-inch cubes.
  • Slice the pineapple into chunks that are similar in size to the pork. Cut the red onion and green bell pepper in a similar fashion.
  • In a large mixing bowl, combine the pork cubes, pineapple chunks, onion, and bell pepper. Toss gently to combine.

Marinade

  • In a separate bowl, whisk together the barbecue sauce, olive oil, soy sauce, garlic powder, and black pepper.
  • Pour the marinade over the pork and vegetable mixture, ensuring everything is well coated.

Skewering

  • Thread the marinated pork and vegetables onto soaked wooden or metal skewers, alternating ingredients for a colorful presentation.

Grilling

  • Grill the skewers for about 15 to 20 minutes, turning occasionally until the pork is cooked through and veggies are tender. Optionally, brush on more BBQ sauce during the last few minutes of grilling.
  • Serve hot and enjoy!

Notes

For best flavor, marinate the pork and vegetables for at least 30 minutes prior to grilling. Soak wooden skewers in water for at least 30 minutes before grilling to prevent burning.
