Preparation

  • Place the eggs in a single layer in a saucepan. Add cold water to cover the eggs by about an inch. Bring the water to a vigorous boil over high heat.
  • Once the water reaches a boil, turn off the heat, cover the pan, and let the eggs sit undisturbed for exactly 10 minutes.
  • Prepare an ice bath in a large bowl filled with ice and cold water. Transfer the hot eggs to the ice bath and let cool for at least 5 minutes.

Filling Preparation

  • After the eggs have cooled, gently tap each egg on a hard surface to crack the shell. Roll the egg between your hands to loosen it.
  • Under cool running water, peel the eggs and slice each in half lengthwise. Scoop the yolks into a mixing bowl and place the egg whites on a serving platter.
  • Add mayonnaise, yellow mustard, salt, pepper, paprika, and food coloring (if using) to the yolks and mix until smooth and creamy.

Assembly

  • Spoon the yolk mixture into a piping bag fitted with a star tip. Pipe the filling into each egg white half, mimicking the shape of pumpkins.
  • Create ridges using the dull side of a knife to mimic a pumpkin's texture. Insert small bundles of chives as stems.
  • Optional: Dust with extra paprika and chill for at least 30 minutes before serving.

Notes

Use the freshest eggs for easier peeling. Consider adding garlic powder or swapping mustard types for different flavor profiles. Can be made a day in advance; just cover and refrigerate.
