Dressing

Preparation

  • Start by preparing the pineapple. Slice off the skin and remove the core, aiming for one-inch cubes.
  • Wash the cucumber, slice into thin rounds, and add to the mixing bowl.
  • Finely chop the red onion and add it to the bowl with the pineapple and cucumber.
  • Chop the cilantro and combine with the other fresh ingredients in the bowl.

Dressing

  • In a small bowl, whisk together lime juice, honey, salt, and black pepper until well combined.
  • Pour the dressing over the salad mixture and toss gently to coat all ingredients.

Serving

  • Chill the salad in the fridge for about 30 minutes before serving for the best flavor.

Notes

Serve chilled. For variation, consider adding diced bell peppers or avocado. Store leftovers in an airtight container for up to 2 days, but note the cucumber may lose its crispness over time.
