Dressing

Preparation

  • Wash the mixed greens thoroughly and place them in a large bowl.
  • Rinse and drain the black beans, then add them to the bowl.
  • Add the corn kernels, evenly distributing them over the greens.
  • Halve the cherry tomatoes and sprinkle them throughout the salad.
  • Dice the avocado and gently fold it into the salad.
  • Add the sliced red onion and chopped cilantro.

Dressing

  • In a separate bowl, whisk together lime juice, olive oil, ground cumin, salt, and pepper until smooth.
  • Drizzle the dressing over the salad and toss gently to combine.
