  • 3 medium Fresh cucumbers Sliced thinly
  • 6 slices Crumbled bacon Cooked and crumbled
  • 1 small Red onion Thinly sliced
  • 1 cup Cherry tomatoes Halved
  • 1/2 cup Feta cheese Crumbled

Dressing Ingredients

  • 1/4 cup Olive oil Quality extra virgin
  • 2 tablespoons Vinegar White wine or apple cider vinegar
  • 1 teaspoon Salt To taste
  • 1/4 teaspoon Pepper To taste
  • 2 tablespoons Fresh dill or parsley Optional, for garnish

Preparation

  • Wash the cucumbers thoroughly under running water. If desired, peel them to reduce bitterness. Slice the cucumbers into thin rounds and place in a large mixing bowl.
  • Cook bacon in a skillet over medium heat for 8-10 minutes until crispy. Transfer to a plate lined with paper towels, then crumble.
  • Thinly slice red onion and soak in cold water if desired. Halve the cherry tomatoes and crumble the feta cheese.
  • Add bacon, red onion, cherry tomatoes, and feta to the bowl with cucumbers.

Dressing

  • In a small bowl, whisk together olive oil, vinegar, salt, and pepper to create a dressing.
  • Drizzle the dressing over the salad mixture and gently toss to combine while keeping the ingredients intact.
  • Garnish with fresh herbs and serve immediately or allow to chill for 30 minutes to enhance flavors.

Notes

For a vegetarian option, omit bacon and replace with other vegetables or nuts. Ensure to store leftovers separately for optimal freshness.
