Ingredients
  

For the Chicken Marinade

  • 2 pounds Chicken thighs or breasts Cut into bite-sized pieces
  • 1/4 cup Soy sauce
  • 2 tablespoons Brown sugar
  • 2 tablespoons Gochujang (Korean chili paste) Adjust to taste
  • 3 cloves Garlic cloves Minced
  • 1 tablespoon Ginger Freshly grated
  • 1 tablespoon Sesame oil

For Assembly

  • 4 cups Cooked rice (white, brown, or jasmine) Cook according to package instructions
  • 1 cup Fresh vegetables Options include bell peppers, cucumbers, or carrots
  • 1/4 cup Green onions Chopped, for garnish
  • 2 tablespoons Sesame seeds For garnish
  • 2 Lime wedges For serving

Instructions
 

Marinate the Chicken

  • In a medium-sized bowl, combine soy sauce, brown sugar, gochujang, minced garlic, grated ginger, and sesame oil. Whisk until smooth.
  • Cut chicken into bite-sized pieces and place them into the marinade. Allow to marinate for at least 15 minutes.

Prepare the Rice and Vegetables

  • While the chicken marinates, prepare your rice according to package instructions.
  • Chop fresh vegetables into desired shapes.

Cook the Chicken

  • Heat a large skillet or grill pan over medium-high heat and add a splash of sesame oil.
  • Carefully place marinated chicken into the hot pan and cook for 6 to 8 minutes, turning occasionally until cooked through.

Assemble the Bowls

  • Divide cooked rice among serving bowls.
  • Top rice with grilled chicken and an assortment of fresh vegetables.
  • Garnish with chopped green onions and sesame seeds, and add lime wedges on the side.

Notes

Customize the level of spiciness in the marinade, and feel free to swap or add vegetables as preferred. This dish can be made vegetarian by substituting chicken with tofu or tempeh.
