Ingredients
  

For the Taco Filling

  • 1 pound ground beef or turkey
  • 1 packet taco seasoning
  • ¾ cup water

For the Salad Base

  • 1 large head romaine lettuce, chopped
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 can (15 oz) sweet corn, drained
  • 1 cup diced tomatoes (fresh or canned)

For Topping

  • 2 cups crushed Doritos (Nacho Cheese or Cool Ranch)
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • ½ cup sour cream
  • ½ cup salsa (or more, to taste)

Instructions
 

Preparation

  • Heat a skillet over medium heat and brown the ground beef or turkey for about 5-7 minutes, breaking apart with a spatula. Drain excess fat.
  • Sprinkle taco seasoning over the cooked meat, add ¾ cup of water, and stir. Simmer on low for around 5 minutes.
  • In a large bowl, combine chopped romaine lettuce, rinsed black beans, drained corn, and diced tomatoes. Toss gently.

Assembly

  • Pour the seasoned meat mixture over the salad base and sprinkle with crushed Doritos, shredded cheese, sour cream, and salsa.
  • Toss everything together or serve layered for presentation.

Notes

For a vegetarian version, use plant-based crumbles or a mixture of lentils and mushrooms. Store salad components separately to maintain crunch and freshness.
