  • 3 to 4 pounds corned beef brisket Choose a well-seasoned cut for best flavor.
  • 1 large onion, sliced Provides a flavorful base for the beef.
  • 4 carrots, chopped into large pieces Adds sweetness and nutrition.
  • 4 medium potatoes, cut into quarters Absorbs flavors and juices.
  • 4 cloves garlic, minced Enhances the dish's aromatic depth.
  • 2 cups beef broth Provides moisture and richness.

Spices

  • 1 tablespoon mustard seeds
  • 1 teaspoon black peppercorns
  • 1 teaspoon thyme
  • 1 teaspoon salt

Instructions
 

Preparation

  • Slice one large onion into thick pieces and lay them at the bottom of the slow cooker.
  • Place the corned beef brisket directly on top of the sliced onions, fat side up.
  • Chop four carrots into large pieces and quarter four medium potatoes, placing them alongside the brisket.
  • In a small bowl, combine minced garlic, beef broth, mustard seeds, black peppercorns, thyme, and salt. Stir well.
  • Pour the mixture over the beef and vegetables in the slow cooker.

Cooking

  • Cover the slow cooker and set on low for 8 to 10 hours or high for 4 to 5 hours.
  • Once cooking time is complete, slice the brisket against the grain and serve with the vegetables.

Notes

Adjust spices to personal taste. Consider adding bay leaves or apple cider vinegar for additional flavor. Leftovers make great sandwiches.
