Preparation

  • Preheat your oven to 325°F (165°C). Grease and flour a 10-inch bundt or tube pan.
  • In a large mixing bowl, cream together the softened butter and cream cheese until smooth. Gradually add the sugar, beating until light and airy.
  • Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  • In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add this to the creamed mixture and mix until just combined.
  • Gently fold in the chopped strawberries.

Baking

  • Pour the batter into the prepared pan and smooth the top. Bake for 75 to 85 minutes until a toothpick comes out clean.
  • Let the cake cool in the pan for about 15 to 20 minutes before inverting onto a wire rack.

Glazing (optional)

  • Whisk together powdered sugar, milk, and strawberry puree. Drizzle over the cooled cake.

Notes

Use room temperature ingredients for a smoother batter. Consider lightly coating strawberries with flour before adding to prevent sinking. Store in an airtight container for up to 3 days at room temperature or refrigerate for a week.
