  • 1 cup Coconut milk Can use any non-dairy milk
  • 1/4 cup Maple syrup or honey Adjust sweetness to taste
  • 1 teaspoon Vanilla extract Adds aromatic depth
  • 2 tablespoons Cornstarch For thickening; can substitute
  • a pinch Salt Balances flavors
  • 1 tablespoon Fresh lemon juice Brightens flavor

Instructions
 

Preparation

  • Wash the fresh strawberries, remove stems, and slice them into smaller pieces.
  • Place the sliced strawberries into a blender or food processor and blend until smooth.
  • In a saucepan, combine the coconut milk and cornstarch, whisking to prevent lumps.
  • Heat the mixture over medium heat, whisking continuously until it thickens, about 5 minutes.
  • Remove from heat and stir in vanilla extract, salt, and lemon juice.
  • Pour the strawberry puree into the coconut milk mixture, adjusting sweetness if needed.
  • Pour mixture into serving dishes and refrigerate for at least 4 hours or overnight to set.

Notes

Store leftovers in airtight containers in the refrigerator for up to 3-4 days. Can freeze for longer storage.
