  • 1 cup boiling water Activates the gelatin, helping it dissolve for the right texture.
  • 1 cup cold water Helps to cool down the gelatin mixture.

Fruits

  • 2 cups assorted fresh fruits (such as strawberries, blueberries, and mandarin oranges) Provides color, texture, and freshness; essential for taste.
  • 1 tablespoon lemon juice Brightens up the flavors and adds a refreshing zing.

Optional Ingredients

  • 1 cup low-fat cottage cheese Enhances creaminess and adds protein content.

Preparation

  • In a large bowl, pour one package of sugar-free Jello and slowly add one cup of boiling water. Stir until the Jello dissolves completely.
  • Add one cup of cold water and stir again to blend evenly.
  • Refrigerate the mixture for about one hour, or until it begins to thicken.
  • Wash and prepare two cups of assorted fresh fruits, slicing strawberries into small pieces.
  • In a separate bowl, combine the fruits with one tablespoon of lemon juice, gently tossing them to coat.
  • Once the Jello is thickened, fold in the fruit mixture and add low-fat cottage cheese if desired.
  • Pour into a serving dish, cover, and refrigerate for two to three hours to set completely.

Notes

This salad can be customized with different fruits and optional ingredients to suit personal preferences. It is best enjoyed chilled and can be prepared ahead of time. Storage: Cover and refrigerate leftovers for up to five days.
