Chocolate Ganache

Preparation

  • Preheat the oven to 350°F (175°C). Grease two 9-inch round cake pans and dust with flour.
  • In a large mixing bowl, whisk together the all-purpose flour, cocoa powder, baking powder, baking soda, and salt until well combined.

Mixing the Batter

  • In a separate bowl, mix the granulated sugar, vegetable oil, buttermilk, eggs, and vanilla extract until smooth.
  • Gradually add the dry mixture to the wet mixture until just incorporated. Do not over-mix.

Baking

  • Divide the batter evenly between the prepared cake pans.
  • Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.

Cooling and Ganache Preparation

  • Let the cakes cool in the pans for 10 minutes before turning them out onto wire racks to cool completely.
  • Prepare the ganache by heating heavy cream until steaming. Pour over chopped dark chocolate, let sit, then stir until smooth.

Assembly

  • Once the cakes are cooled, place one layer on a serving plate. Spread chocolate ganache over the top, then place the second layer on top.
  • Pour remaining ganache over the top, allowing it to drip down the sides.

Notes

For extra moistness, substitute one egg with an additional egg yolk. You can add raspberry preserves or whipped cream between layers for added flavor.
