Ingredients
  

Salad Base

  • 2 cups Cooked Chicken, shredded Use rotisserie, boiled or grilled chicken.
  • 3 cups Green Cabbage, finely shredded
  • 1 cup Carrots, thinly sliced or grated
  • 1/2 cup Red Onion, thinly sliced Ensure slices are thin to avoid overpowering taste.
  • 1/4 cup Fresh Mint, chopped Add just before serving for optimal freshness.
  • 1/4 cup Fresh Cilantro, chopped Add just before serving for optimal freshness.

Dressing

  • 1/4 cup Lime Juice, freshly squeezed
  • 2 tablespoons Fish Sauce A staple in Vietnamese cuisine.
  • 2 tablespoons Rice Vinegar
  • 1-2 tablespoons Honey or Sugar To balance tanginess.
  • 1 clove Garlic, minced Optional depending on preference.
  • 1 pinch Chili Pepper, optional For a spicy kick.

Toppings

  • 1/4 cup Peanuts, chopped For added crunch.

Instructions
 

Preparation

  • Prepare the chicken by shredding or chopping it into bite-sized pieces, ensuring it is ready for the salad.
  • Finely shred the green cabbage and prepare the carrots by slicing or grating them.
  • Thinly slice the red onion. Chop the fresh mint and cilantro.

Dressing

  • In a small bowl, whisk together lime juice, fish sauce, rice vinegar, honey or sugar, and minced garlic and chili pepper (if using) until the sweetener dissolves.

Assembly

  • In a large mixing bowl, combine shredded chicken, cabbage, carrots, red onion, mint, and cilantro. Toss well.
  • Drizzle the dressing over the salad and toss gently to coat.
  • Transfer to a serving platter, top with chopped peanuts, and serve immediately.

Notes

For substitutions, consider cucumbers or bell peppers for added crunch. Prepare components ahead of time but mix salad and dressing just before serving for freshness.
